If you take this salad to your summer block party, you will win over the hearts (and stomachs) of the entire neighborhood–even the weird, cranky guy that has never talked to you and likes to decorate his yard with lawn ornaments he “repurposed” from other people’s trash.

Really, it’s that good. What could be bad about it? Juicy watermelon is a treat to eat in the summer heat. The saltiness of the feta and the tang of the lime juice is the perfect contrast to the sweetness of the watermelon. Sneaking in some sliced almonds adds an unexpected crunch.

Every time I bring it to a party, it’s a hit. I challenge you to find someone who doesn’t like this dish (people with food allergies excepted).

Sweet and salty watermelon and feta salad

Makes about 10, 1/2 c. servings

1 small seedless watermelon, cubed

1/4 c. fresh mint, roughly chopped

4 oz. feta cheese, crumbled

1/4 c. vanilla roasted almonds, sliced

1/2 c. lime juice

1/4 c. honey

In a small bowl combine lime juice and honey and set aside. In a large bowl gently mix watermelon, mint, feta and almonds. Drizzle the lime juice mixture over the watermelon mixture.
