Vegan low-fat mayo

This recipe is ridiculously easy and only requires three ingredients: low-fat silken tofu, lemon juice and salt. You could fancy yours up with some roasted garlic or hot sauce, but I’m leaving mine alone; it’s tangy and salty just the way I like my mayo to be–without the fat or calories!

Three ounces of the low-fat silken tofu I used has only 40 calories and 1 gram of total fat. Since I’m pretty sure you won’t use three ounces on any sandwich you’re going to make, I’d call this a nearly fat- and calorie-free condiment.

Vegan Low-Fat Mayo

Makes 1 1/2 cups.

1, 12-ounce container of low-fat silken tofu

Juice of one lemon

1/2 t. salt

Blend all ingredients until smooth. Refrigerate at least one hour before serving.
